Having introduced my Happiness is… series, and touched the surface of some of the things that can feed into unhappiness, I am beginning my Happiness is... journey with mindfulness. Slimming World Recipe – Garlic & Balsamic Tomatoes

Tomatoes. Low FODMAP (easier on the digestion) and speed food on the Slimming World plan. What's not to like? I personally love tomatoes, even served simply sliced and sprinkled with salt. However, to switch things up a little, these tangy tomatoes are super tasty and make a wonderful accompaniment to many meals. In particular, they would work well with Hassleback Potatoes and Loaded Potato Skins.

Slimming World – Syn Free Potato Salad

Traditional potato salad, whilst delicious, can be costly when it comes to your daily syn allowance. If you read my Slimming World Journey post this week, called Hot! Hot! Hot!, you will know that the weather has re-inspired my love of the summer barbeque. And what better to go with some tasty syn free barbeque delights, than a fresh potato salad. So I set about looking for a syn free recipe.
