Hello and happy Friday everybody! Welcome to another Food Friday instalment and today I thought I would share 3 of my current favourite lunches.
Now, of course, you can also have these meals for dinner. I have done so and they make for great meals on their own or to accompany other things. So, let’s take a look:
Limey Seafood Rice
Although based on other things I had seen or read about, I am pretty sure I created this recipe from scratch. With a thought of chilli and lime prawns as a basis, I set about figuring out a more satisfying meal than just prawns alone. This recipe uses prawns, smoked haddock, lime juice, a stock cube (I use chicken), rice and chopped veg. You can, of course, use whichever veg you prefer. I tend t opt for green pepper, onions, leeks, and maybe some baby corn. If you follow my food Friday content you will know that these are my faves.
A Bangin’ Burger
If you have followed my blog for a while, you may remember my Best Burgers recipe. This one rivals it with my less work although I would say has a little less flavour, depending on how much you make the other recipe. The main reason for this is that this burger is a 1 syn 5% fat burger from Aldi. You can buy these in packs of 4 and they make for much quicker and convenient burger making. Again, you can serve these with Slimming World chips or rice or whatever you like but they also work well with just some salad for speed.
Chicken Fried Noodles
These Chinese style noodles are sooooo good. The added bonus is that they are super easy to make. With Aldi being my goto shopping venue, I use their dried noodles. They literally take 4 minutes in a pan of boiling water and if you stir fry some beansprouts, green pepper and onion whilst they cook, bung in some cooked chicken, the noodle and some soy sauce and you’re onto a winner.
