Hello everyone and welcome to a revamped hasselback potatoes recipe! This week I am bringing my low fodmap, syn free hasselback potatoes recipe to life with the inclusion of a YouTube video!
As I mentioned in my Countdown Tool post Slimming World – The Countdown Tool, I decided to try out this new type of baked potato. I had seen numerous pictures of hasselback potatoes on Instagram but none had appealed to me thus far. However, a surge of inspiration caught me one evening and I decided to experiment to see what the fuss was about. And now I know – why oh why didn’t I try these before!?
You will need:
Low calories cooking spray
Preheat your oven to 200 degrees and give the potatoes a wash.
Taking care over your fingers(!), slice each potato across the width but do not cut through to the bottom of the potato. Leave a centimetre or two at the bottom of the potato. Continue to slice in this way across the length of the potato. You can make the slices as thick as you like just remember that the slices need to be flexible enough to pull apart slightly. Don’t panic if the potato retains its form as this stage as it will splay as it bakes.
This step is optional, but I like to microwave my potatoes for a few minutes to reduce the time in the oven. I usually cook a potato for 3-4 minutes depending on the size. For additional potatoes, increase the microwave time by 2 minutes per potato.
Line a baking tray with foil and spray the foil with a low calorie cooking spray. Place the potatoes on the baking tray and spray the potatoes with plenty more of the spray. Here I used a few sprays of the garlic and chilli varieties. Absolutely no need to though, these potatoes are amazing with just some salt and pepper. Season the potatoes well and put the tray into the oven for 25 minutes.
Remove the potatoes from the oven and give them another good spray of cooking spray, being sure to spray into the potato slices where possible. Pop them back into the oven for a further 20 mins or until crisp.
Feel free to spray the potatoes as often as you like during the baking. From my perspective, the more spray and seasoning that makes its way down into the slices, the more delicious the result.

Tasty Hasselback Potato additions:
Herbs. Rosemary is particularly good, as is oregano, my favourite herb.
Garlic. I love Frylight and for a tasty addition, you could use some of the garlic Frylight that can be purchased from supermarkets.
Chilli. Similarly with the garlic Frylight mentioned above, there is a chilli Frylight available to buy. If you choose to include this in your cooking, just be cautious with how much you use as it can be quite spicy. As an alternative, a sprinkle of chilli flakes would work a treat.
Parmesan. 30g of parmesan is a Healthy Extra A.
Cheese and bacon. 40g of reduced fat cheddar is a Healthy Extra A and crispy bacon (with all visible fat removed) is free!
