So, a Slimming World Recipe - Main - Chicken Soup. Warm, nutritious delicious and just what was needed this week.
You will need:
Chicken carcass – all skinned removed.
Selection of roughly chopped vegetables – I used onions and carrots but leeks and celery would add extra flavour
Freshly ground black pepper
Herbs (Fresh or dried)
Chicken Soup preparation
Put the chicken carcass in a large pan and just cover with cold water. Bring to the boil over a high heat and skim off any scum from the top.
Add the roughly chopped vegetables, herbs and stock. Season with pepper, turn the heat to low and simmer gently for 1 hour.
Retain any vegetable chunks and chicken, then strain the soup through a fine sieve. Bin everything left in the sieve.
Fry a couple more onions in the pan (the original ones disintegrate) until they soften. Return the soup to the pan and then blend together the soup, vegetable chunks and chicken and the onions.
I planned to soften some carrots and potatoes to add to the soup but instead I just roasted some vegetables and ate them alongside the soup. Is that weird? Either way, it tasted amazing.
