As part of my Slimming World recipe collection, I thought I would let you know how I create my Slimming World coleslaw. This recipe is so easy to make and is a fantastic addition to a meal of cooked meat and salad, amongst many others of course.
One of my favourite thing to eat this coleslaw with is barbeque or pulled pork and salad. Well, it was until Aldi changed their BBQ pork fillet. Why Aldi why?
If preferred, the recipe can be adapted to make it syn free. If you exclude the lighter than light mayo, you remove the syn content. However, I like to indulge a syn or two because I think it makes a big difference to the flavour.
You will need:
Red Onion or Spring Onion
Quark or Fat-Free Fromage Frais
Lighter than Light Mayo (1/2 syn per tbsp.)
Lemon or Lime juice
Firstly, chop the white cabbage, red cabbage, carrot and onions to the desired size. I like to shred them relatively thinly.
Mix together the Quark or fat-free fromage frais, lighter than light mayonnaise, salt, pepper and lemon/lime juice. Then, perform a taste test and add more seasoning or juice as necessary.
Finally, add the chopped cabbage, carrot and onions to the fromage frais mixture and combine thoroughly.
Voila! It really is as simple as that! And just a couple of syns makes a huge batch you can keep in the fridge and enjoy later.
