Slimming World Recipe – Fakeaway – Syn Free Prawn Chow Mein

I have to give credit to the amazing Two Chubby Cubs, whose chicken chow mein recipe gave me the inspiration to conjure up this beauty.

Slimming World Recipe - Prawn Chow Mein

As per usual I adapted it to suit my own purposes and, as a result, the following blossomed into fruition. It was delicious, even if do say so myself.

You will need:

  • Low calorie cooking spray (I used the garlic frylight for extra flavour)

  • Prawns

  • Spring Onions, chopped finally or into small chunks (Or thinly sliced onion as an alternative)

  • Peppers, sliced

  • Rice noodles (or whatever noodles you like)

  • 300ml stock (I used 2 stock cubes, 1 chicken and 1 vegetable)

  • Tbsp Worcester Sauce

  • 1 tbsp light soy sauce

  • 1 tbsp dark soy sauce

  • Chinese five spice

Optional:

I would recommend including more vegetables if you are only cooking the chow mein. I actually served my chow mein with beef and black bean and included the majority of the vegetables in the black bean sauce.

Tasty additions would be:

  • Grated or very thinly sliced (julienned) root ginger

  • Sliced mushrooms

  • very thinly sliced carrots

  • Baby corn (my favourite)

  • Peas

  • Mangetout

Stir fry the prawns and vegetables and cook the noodles as per the packet instructions.

Dissolve the stock cubes in the boiling water and add a good shake of the Chinese five spice, the Worcester sauce and the soy sauce.

Once the noodles are almost cooked through, add the noodles to the prawn and vegetable mix. Whilst combining the mixture, add the stock and continue mixing over the heat until the liquid has been soaked into the noodles. This may take a few minutes depending on how much you have cooked your noodles.

Plate up and serve!
