Slimming World Recipe – Loaded Potato Skins – Low FODMAP

These loaded potato skins fill your tummy, are easy to make, and are also very tasty. On top of all of that, they are syn free! I love to make these and enjoy them with a side salad.

You will need:

  • Large potatoes

  • Bacon

  • Tomatoes

  • Onions (Use spring onions for LOW FODMAP)

  • Green pepper

  • Salt

  • Pepper

  • 3 Babybel Lights or 40g of reduced fat cheese per person

  • Herbs

  • Salad leaves

Method

Bake the potatoes until fluffy on the inside and crispy on the outside. I usually go for about an hour at 200c but this depends on how many potatoes you are cooking. To shorten the cooking time, microwave the potatoes for a few minutes. I always cook mine for at least 3 minutes for 1 potato, and then I add an extra 2 mins per additional potato. The longer you microwave the potatoes, the quicker they will bake in the oven. Logical right?

Whilst the potatoes are cooking, chop the bacon into smallish chunks and fry in low-calorie cooking spray until crispy. Chop the pepper, onions and tomatoes into chunks, size is optional, see pictures for my preference.

Optional step: You can choose to fry the peppers, tomatoes and onions to soften. I love to do this but if you prefer not to then just enjoy them fresh. Delicious either way. If you do choose to fry them, add them to the bacon before it turns crispy. This allows enough time to cook the veg through and combine the flavours.

Chop the babybel into slices or little chunks, or grate the cheese if using a block. Set aside.

Add the bacon and veggies, most of the cheese, salt, pepper and herbs to a big bowl then mix to combine the flavours. Set aside.

Warning: Be careful with this next bit! I ALWAYS manage to burn myself. But then that may just be me...

Once the potatoes have baked, slice them in half and scoop the insides into the large bowl.

Mix the bowl contents together until thoroughly combined. Then, scoop the mixture back into the potato skins and place on your plate.

Finally, sprinkle the remaining cheese over the top of the potatoes and serve with a big salad.

All done, so sit down and enjoy.
