In need of a tasty, filling and syn free breakfast? This Slimming World Recipe – Main – Breakfast Hash with Potato, Onion & Egg is a corker and was a great weekend start to the day this week.

You will need:

(Please note, the quantities can vary depending on how hungry you are!)

  • Potatoes

  • Onions

  • Eggs

  • Salt

  • Pepper

  • Optional: herbs – I like to use oregano in everything!

  • Low calorie cooking spray

Slice the potatoes and lay them out on a plate. Put the plate into a microwave and cook for 4 minutes (if making larger quantities increase the microwave time). If no microwave is available, the potatoes will just take a little longer to cook.

Spray a big frying pan with low calorie cooking spray and fry the potatoes over a medium to high heat. If desired you can sprinkle over a little salt at this stage. Turn regularly to prevent burning. Whilst the potatoes are cooking, slice the onions, I like mine as thin(ish) half moon shapes.

Once the potatoes are browning nicely, spray a little more cooking spray and add the sliced onions to the pan and stir regularly. In a separate container, beat together the eggs and add salt, pepper and some herbs for extra flavour, if you have them. Once you have the potatoes and onions almost looking cooked to your requirements, push them to over to one side and add the eggs to the pan. Stir continuously to scramble the eggs and once cooked to your desired consistency, mix everything together to combine.

Turn off the heat, plate up and sit down to enjoy! Easy peasy, delicious and filling grub.
