Slimming World Recipe – Main – Syn free Prawn & Tomato Spaghetti

This Slimming World Recipe – Syn free Prawn & Tomato Spaghetti, is so lovely, I had it twice during this week!

Prawn & Tomato Spaghett

You will need:

  • Tomatoes (I used baby plum tomatoes)

  • Frozen prawns

  • Spinach

  • Dried herbs (I used basil, oregano)

  • Salt

  • Pepper

  • Dried Spaghetti

  • Garlic Frylight

  • Chilli Frylight

  • Ovenproof dish big enough to contain all of the food when mixed together.

Chop the plum tomatoes in half and add to the ovenproof dish. Spray the tomatoes with a few sprays of both the garlic and the chilli Frylights but remember that the flavour of these are quite strong… Mine turned out quite spicy! Mmmmm happy face. Add a good shake of basil, oregano, salt and pepper then mix together.

Roasting tomatoes

Pop the tomatoes into an oven at about 180 degrees and bake until the tomatoes are all soft and beginning to fall apart. Put them back into the oven whilst you bring a pan of salted water to the boil and cook some spaghetti. Cook as much as you like, but bear in mind the amount of tomatoes you have chopped up. At this point, take the tomatoes out of the oven and add the prawns and a handful of spinach to the tomato mixture. It should be smelling pretty amazing by now. Mix it all together and return to the oven whilst the spaghetti cooks.

Once the spaghetti has reached the desired consistency, drain and add to the tomato, prawn and spinach mixture. Mix it all together well and return to the oven for a further 5 mins to bake all of the flavours together. You could probably skip this step and it would still be great but this is the way I chose to do it.

Grab yourself a fork and dig in. Syn free and totally delicious.
