This week I made an old favourite and, as I love it so much, I thought you might also find it to be a simple but tasty dish to try.

You will need:
Frylight (Garlic flavoured variety is best but any of them will do)
Mackerel in tomato sauce
Handful of spinach
Bring a pan of water to the boil and add your desired amount of pasta. Turn the heat down a little. Chop the spring onions and warm a frying pan sprayed with frylight or an alternative low calorie cooking spray.
Chop the halloumi into little chunks and add to the frying pan along with the spring onions. As the halloumi begins to brown, add the spinach. Stir regularly to ensure the spinach wilts evenly and to prevent the halloumi from sticking or burning.
Open the tin of mackerel and add the contents to the frying pan along with some salt and pepper. Use the spoon (or an alternative appropriate tool) to make sure the mackerel is broken down into smaller chunks/flakes and give everything a good stir to combine. Keep the mixture warm whilst the pasta finishes cooking.
Add some salad leaves to a plate then drain the pasta and add to the frying pan. Give everything a thorough mix and serve with the salad.
