Slimming World – Week 2

So last week I had chicken, kept the carcass and boiled it up to make soup. Mmmmm, not only delicious but how domesticated do I feel right now! Right? Especially as it turned out to be the best chicken soup I have ever made. Like. EVER. So, for this reason, I thought you should all know about it so that you can make it too. The recipe is available here: Slimming World Recipe - Chicken Soup.

Easy to do and creates tasty, nutritious grub for a yukky wet and wintery English evening. Or just great flavoursome food for wherever you are in the world. Here's a picture of how the soup turned out, hope you enjoy! If you do, tweet me at @MissAmyRach.

Roasted Potatoes & Veggies with Syn Free Lamb Gravy

Potatoes & veg with syn free gravy

Result: Happily, another lb has dropped off! 3lb in total… slow but in the right direction.

Exhibited some terrible behaviour on Tuesday where I didn’t eat all day – that is just not healthy and relatively unheard of for me. I didn’t think I had it in me because I love food so much and not eating usually leads to a headache, stomach ache and a general ratty attitude. Amazingly, I didn’t lose the plot and ‘sod the syns’ so hoping that this rare phenomenon is a sign of how committed I’m feeling to staying on plan and getting to where I want to be. Fingers crossed!

Another lifesaver for me at the moment is Beanies coffee. I love these little syn free beasties so much that I’m going to do a whole separate review on the flavours I’ve tried. Of course they’re just coffee flavours, but it can be the little things in life that really make a difference to how successfully we achieve, whether that be particular goals or broader ambitions in happiness and wellbeing. I know not everyone is into that sort of thing but the older I get, the more I believe in the benefits of mindfulness to enhance the individual lives we have; within this, for me, is taking the time to appreciate a beanies coffee which feels like such a treat on a weight loss journey, even though they’re syn free!
