Hello everyone and welcome to the next Food Friday instalment. Whether you are a Slimming World Slimmer or a Low FODMAP friend, this Nando’s Inspired Spicy Rice recipe is versatile and can be incorporated into lots of dishes. Now, I never used to like rice. I found it boring and never fancied it. Little did I realise that in a few years things would change so much!
Chinese has always been a thoroughly enjoyable takeaway for me. Interestingly, I never used to order rice unless somebody else wanted it. I was more of a noodles gal. But these days, especially since I discovered how rice and potatoes benefit my digestive woes, rice has risen through the ranks.
So, if you have been following my Slimming World series, you will know that I have become partial to the odd Fakeaway! Although this recipe requires a few different ingredients, it is easy to make and tastes great.
Mayflower Curry is available in a range of stores but, annoyingly, none of those appears on the Isle of Wight. As a result, I purchase my curry powder from Amazon. The reality is that my last order consisted of 12 boxes, and yes it was an accident, but this stuff is soooooo good I am secretly very pleased about the mishap.
I have to give credit to the amazing Two Chubby Cubs, whose chicken chow mein recipe gave me the inspiration to conjure up this beauty.
